I am trying to change the curve on my profile editor for my drawing pen. What I want to do is change the curve for Pressure. I have P in my Size window and I navigate to Profile Editor. I change the curve, the shape mimics itself in the tiny Size graph (nice) I go to draw and the curve resets itself. As expected, Save Profile doesn't do anything to preserve the shape. Any advice on how this works?

if you are using a custom drawing-tool button, your new curve(s) should be recorded again (updates) in the button,
so, firsty tweak your profile connection(s),
then RMB-click the custom button and "Grab Current Tool with Colors, Keep Icon",
the new settings will be recorded for this tool.

Wow, worth playing with. I suggest creating a row of copies of the pencil and try variations of settings in each one so it's easier to switch between them to decided which one works best. The possibilities of choices seems endless though.
