Sometimes adding spatter effects is a great way to add texture to a picture. I've always wanted to make custom brushes that could do a good job of this, and while I was researching on the internet, I found a GREAT site that explained some of the conditions necessary to make various spatter patterns. It's geared towards forensics and goes over blood spatter patterns. Anyways, an interesting and educational read.

Have you tried making organic blotches with black ink on paper, then scanning them in and editing them to make custom brushes?
